You can't stop eating this! Hearty Vegetable Soup

Vegan and vegetarian food made easy.

Ingredients
• 2 ½ Tablespoons olive oil or cooking Oil
• 1 medium chopped yellow onion
• 3 medium peeled and chopped carrots
• 2 sticks chopped celery 3 cloves garlic, minced
• 1 sachets Ina Paarmans Kitchen Concentrated vegetable Stock
• 2 Medium diced tomatoes (undrained)
• 3 Medium peeled and 4 cm thick diced potatoes
• 1/3 cup chopped fresh parsley
• 2 bay leaves
• 1/2 tsp dried thyme
• Salt and freshly ground black pepper (to your taste)
• 1 cup frozen or fresh corn
• 1 cup frozen or fresh peas

Instructions1.
Heat olive oil in a large pot over medium-high heat. Add onions, carrots, and celery and sauté for 4 minutes then add garlic and sauté 30 seconds longer.
Add in broth, tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste.
Bring to a boil. Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender about 20 - 30 minutes.
Add corn and peas and cook 5 minutes longer. Serve warm.
