Butter Bean Curry Recipe - Bayleaf and Sage

#Curries don’t have to be complicated with a little bit of this and a little bit of that. Growing up as a South Africa Indian my mum cooked a curry in 10 to 15 minutes with no measurement and not many ingredients.

Today we made a #butterbeancurry and if you are on a budget or just need something quick and easy then this is for you.

1 can of Pot of Gold Butter beans in Tomatoes sauce
1 small Onion chopped
Salt to taste
3 or 4 curry leaves
¼ teaspoon jeera/cumin seeds
¼ mustard seed
1 medium-size crushed garlic
2 teaspoons #masala

Method

In a hot pot add 1 tablespoon of Oil. Next, add the onions and cook until soft. If the onions get stuck to the bottom of the pan, add a little water instead of more oil, this will deglaze the pot.

Next and salt, curry leaves, jeera/cumin seeds and mustard seeds and cook until fragrant or until the mustard seeds start popping for 3 minutes on medium heat.

Next, add the masala and cook for 20 seconds and add the canned butter beans. Add a little water so the bean does not get stuck to the bottom of the pan.

Cooked for 15 minutes and serve with roti or fresh bread or basmati rice.

QUICK NOTE – This is also great with Baked beans, and trust me that you will never eat baked beans the same way after you have tried this recipe.

Ok let’s talk masala, Masala is a combination of different spices and if you what to make a quick easy curry with not worrying about which spices need to go in and the amount, then get yourself masala that is already mixed or you can make your own curry masala.

Mum always brings me some on her visits, so what's in the masala? There you go, chilli powder, Turmeric powder, Cumin powder, Coriander Powder and Garam masala.

As you have seen in the video we just added two teaspoons of the masala and just like that, you have a beautifully cooked #beancurry. This is the basis of most curries and if you have the right masala you have a winner.
