Egg Omelette with Saffron and Emmental Cheese


Ingredients


Egg Mixture
• 2 eggs
• ½  teaspoon salt
• ½ black pepper
• Emmental Cheese or cheese of your choice
• Half a fresh green chilli (optional)
• ½  teaspoon ground saffron dissolved in 1 tablespoon hot water
• 1 teaspoons vegetable oil, butter or ghee

Method
1. To make the batter, break the eggs in a mixing bowl. Add the salt, pepper, saffron, cheese and chilli and whisk for 20 seconds.
2. Pour the egg mixture into the pan, and lift and tilt the pan to evenly coat it with the egg. Once it has cooked on one side flip the omelette over.
3. Tilt the pan and roll the omelette out onto a plate. Serve hot with bread, flat, roti and fresh basil or parsley.
